French Lavender Cake

I first tried lavender cake while at the Lenbachhaus, an art museum in Munich, Germany, and I knew instantly that I had to try to recreate it. I hope you enjoy my take on the perfect tea party cake.

Oven: 350°F. Baking Time: 30 minutes Serves: 8

Cake Recipe:

-4 medium eggs

-3/4 cup sugar

-2 tsp vanilla extract

-80 ml oil

-2 cups cake flour

-2 tsp baking powder

-100 ml sparkling water

-2 Tbsp lavender buds

-1 Tbsp lemon zest

Icing:

-3/4 cup powdered sugar

-2 Tbsp water

-1/4 tsp vanilla extract

-1 drop purple food coloring (optional)

-lavender buds

Step One:
  1. Separate the 4 egg yolks from the egg whites. Beat egg whites until they form stiff peaks.
  2. Combine egg yolks, sugar, lemon zest, vanilla, and oil and mix until creamy.
  3. Add the egg yolk mixture into the egg whites.
  4. Combine flour with baking powder.
  5. Pour flour mixture into the egg mixture, in turns with the sparkling water.

Fold in lavender buds.

Step Two:
  1. Preheat oven to 350°F.
  2. Prepare a 9-inch springform pan with parchment paper.
  3. Pour cake mixture into the pan and bake for 30 minutes.

Let the cake cool completely before icing.

Step Three:
  1. Mix the powdered sugar with water until it forms a thick but spreadable paste. Add more powdered sugar or water if needed.
  2. Add vanilla extract and purple food coloring
  3. Spread onto cake.

Add lavender buds on top.
